My First Post

Cinnamon Cookie Bars

 
Delicious, quick treats that will have kids and parents alike begging for more.
 
Ingredients

For the bars:
18.25 oz box of butter pecan cake mix
1/2 cup of melted butter
2 eggs
1/2 cup of brown sugar
1/4 cup of granulated sugar
2 tablespoons cinnamon

For the topping:
1/4 cup of granulated sugar
1/2 tsp cinnamon

For the icing:
2 cups of powdered sugar
1/2 tsp vanilla extract
2-3 Tablespoons milk or cream
Directions:Preheat your oven to 350°.

In a large bowl, combine cake mix, butter, eggs, brown sugar, granulated sugar, and cinnamon.  Mix until combined.  Batter will be thick. Easier to mix with a mixer, doing it with your hands will totally get you tired out.

Fit a 9 x 13 inch baking dish with a foil sling or a parchment paper sling and then spray with no-stick cooking spray.

Using your clean fingers, press the batter into the pan.  I find I have the best luck if I get my fingers a little bit wet while I do this.  It doesn't need to be perfectly smooth.

Mix the sugar and cinnamon for the topping together and sprinkle over the top of the bars like I did here.
 Bake for 20-25 minutes until a toothpick inserted in the center of the bars comes out clean.  It is okay if the toothpicks don't come out completely clean, it will make them more gooey after they've cooled.

Mix the icing ingredients together.  Add the milk slowly until you reach your desired consistency for your glaze.  Everyone likes it differently, I like mine on the thinner side.


Spread the glaze over warm (not hot) bars. Make sure that they are cooled properly, I poured it on too soon and it flattened the bars. Let it cool completely and serve. :-D
